These delish Berry and Vanilla Christmas Jellies are actually good for you! True story.

They’re grain free, dairy free, gluten free and refined sugar free, so they’re perfect for Christmas, and every other day of the year haha 😉
500g organic frozen mixed berries
2 tbs maple syrup
4 tbs Great Lakes Gelatin Powder
1 tsp vanilla bean powder or essence
1/3 cup coconut water or water
Heat the berries and maple syrup in a saucepan until the fruit has defrosted and softened.
Remove from the heat and puree. Mix the gelatin powder and vanilla bean powder with the coconut water and then stir through the berry mixture.
Pour this mixture into moulds of your choosing or into a container and set in the fridge. Once set, remove from the moulds or cut into squares.
Store in the fridge until just before serving.
