During winter, I’m a porridge girl, through and through. When it warms up, I want a breakie that’s a bit more refreshing.
This is one of my fave ways to refuel after an early morning spin class because I can grab it as soon as I get home before I get hangry. Needless to say, if you make it in a mason jar, you can take it to work, eat on the bus etc. Awesome.
Ingredients (per serve)
½ cup rolled oats
¼ cup chia seeds
1 cup coconut milk (I like Inside Out unsweetened)
½ teaspoon cinnamon
First of all, grab a handful of berries and blend them with your stick blender into a puree. I usually use about 2 1/2 tablespoons of the puree per serve (about half a punnet before they’re whizzed).
Add your puree, oats, chia seeds, coconut milk and cinnamon to your dish/mason jar and stir to combine.
Leave a couple of minutes then stir again (this helps keep the chia seeds from getting clumpy), then seal and place in the fridge overnight.
In the morning, add the toppings of your choice, stir through and enjoy.
Sometimes I add another splash of coconut milk to loosen it up a bit.
Easiest breakie ever? Yep, I think so.
You can use any kind of milk, like almond etc, I’m just a sucker for coconut.
If you prefer things sweeter, mix through a little maple syrup or honey too.
Toppings – my faves are crushed roasted almonds, fresh berries, fresh pomegranate, coconut flakes (toasted = even yummier) and homemade granola.
Make a batch of these at once if you want to feel like a food-prep rockstar. The above ingredients are per serve. The only trouble with making a batch upfront is that if you’re like me, and love these with all your heart, you’ll end up eating them all in one day. Food prep fail haha.
