These gluten free, dairy free, sugar free cookies are a delicious way to get a little extra protein hit. Have one with your post-workout coffee for a guilt-free treat.
1 cup almond meal
4 tablespoons melted coconut oil
2 – 3 tablespoons of rice malt syrup (I use 2)
1 teaspoon vanilla extract
¼ teaspoon baking powder
Handful of almond flakes for topping
Preheat the oven to 150 degrees Celsius (fan-forced) and line a baking sheet with baking paper.
Then just mix up all the ingredients (apart from the almond flakes) really well so you have a nice wet mixture.
Take really small handfuls (a little over a tablespoon) and squish together in your palms. Shape them into little circles on the baking sheet.
I get 9 cookies.
Then put some flaked almonds ontop, pushing them down gently into the cookie mixture.
Bake for 13-15 minutes.
Leave on the tray for 5 minutes to harden a little before transferring to a wire cooling rack (or actually, they’re most yummy still warm with a cuppa).
