These are one of my FAVOURITE treats. These Zingy Lemon Bliss Balls are easy to make, so lemony, so zingy, so moreish, so be careful 😉
½ Cup Almonds
½ Cup Medjool Dates (pitted)
½ Cup Oats
½ Cup Shredded Coconut (or sometimes I do ¼ cup coconut and ¼ cup protein powder)
Few tablespoons of Coconut Oil
Juice of ½ Lemon (or a bit more, taste as you go)
Extra Coconut for dusting
Blitz the Almonds, Dates, Oats and Coconut in the food processor until it looks like crumbs. Add the Lemon Juice and a couple of tablespoons of the Coconut Oil and blend again. If the mixture isn’t coming together, add some more Coconut Oil until it does. And more lemon juice if you’re that way inclined (I am).
Roll into balls, dust in extra coconut and ta daaaaaa! Treat Central.
Store in the fridge for up to two weeks. I promise you, they will not last that long. I make a double batch and even then, they do not last that long.
